Panera Bread is one of the first companies with a business model that is now known as ‘fast-casual’. Panera’s began as Au Bon Pain in 1981, then purchased St. Louis Bread Co. in 1993. The St. Louis Bread Co cafes were studied and modified and eventually became Panera. In 2007, Panera purchased the Paradise Bakery & Café chain and has been working to convert these to the Panera format.
